How big do I need? Can't find any reference to this in the documentation.

I just went to my local chemist and asked for the biggest syringe they had in stock, I think its 35ml, and it was more than enough to do a full hose change on my saints (m810) on my D/H bike 😉

Cheers.

Could only find 30ml or 50ml on Amazon, so ordered a couple of each.

Any syringe size will do, a smaller syringe will just need refilling more often. 😉 We supply our Shimano bleed kits with a 60ml syringe.

We offer a full range of syringes for brake bleeding here:

Picked up a 100ml syringe from a local hydroponic supplier for £5.

Try your local kitchen shop. Injecting jam into doughnuts requires similar equipment, apparently.
