Swapping Shimano mtb callipers/levers

I suspect a leaky calliper* on the rear and have a spare front that could be swapped in. Is it just a matter of unbolting and bolting up again or should I replace banjo/olive/etc (at calliper end)?

*yes the one i was adamant was fixed (for about 3 weeks) after replacing pads and rotor and cleaning calliper.

And should I end up swapping levers (so things match later down the line) do you always replace the old olive and insert thing? Is cutting the hose shorter the only way?

I'd normally just replace the olive by crushing it with some pliers. Never had any issues doing it that way.

There won't be an olive and insert at the calliper end if it's a banjo fitting. A couple of things to bear in mind is that there should be two tiny rubber O rings, one either side of the banjo, don't lose those and if you're replacing like for like the existing banjo bolt should be okay if you don't have a replacement. However there are significantly different lengths of banjo bolt depending on which side of the calliper it's fitted.

If it's a banjo caliper then can't you just unbolt / replace / bolt?

If it's direct line into the caliper then it will be olive and barb. You should replace the crushed olive with a new one but can reuse the barb (also the case for the lever).
