I know I need to unwind the bar tape.
How easy is it to swap brake hoses on 105 brakes?

If it's external cables then not too bad, if it's internal bar routing then might be okay but might involve a lot of sweating and poking spokes into holes and wiggling them about.
You should be able to just unwrap the tape, undo the compression nuts at the lever and swap sides, provided that the hoses are long enough, may need a burp bleed depending on how much fluid is lost.
