I'm struggling to get me head around this, I have a giant glory 09 with a Fox Vanilla R rear shock on it coil, 8 inches of travel. I need to get a bigger lbs coil around 550-600 but is there anything that's restricting me from getting one with a bigger stroke, the current spring on the bike is 350 X 2.8, I can get one quite cheap 550 X 3.25 would that cause much of an issue?

Possibly, there's usually quite a bit of range on them and it's only 'one size up'.
However, I don't know what's 'cheap' for you, but TF Tuned have got 500x2.8, 550x2.8 and 600x2.8 Springs in stock for £45.
You can get any stroke you want as long as you can still wind on the preload adjuster. What matters is the freestroke (the amount it can compress without binding), thats not necessarily related to its total length when comparing 2 springs, but generally you find if you stick within the same brand you'll be OK going up sizes.
