I've bought a set of Stan's Ztr Alpha 340 disc wheelset. However it seems that the hubs do not accept 11 speed road cassettes and there's no way even by buying another freehub to make the hub 11 speed road compatible. Pretty sure I'm correct but wonder if anyone can confirm that this is the case.

I was pretty sure they were 10/11. Only ever put 10 on mine, though.

If a MTB cassette can be fitted with no spacer, then it’s not compatible with road cassettes.

Road cassettes are 1.85mm wider than MTB.

Okay, so would my 11 speed 105 shifter work with an 11 speed Mtb cassette?

Should work (might need a Roadlink style extender to accommodate the cassette).

FYI my mechanic filed my Stans hub to take an 11sp road cassette.

You could use an HG-700 or HG-800 11/34 cassette. It's what I've done on my winter bike that's running old 10spd Dura Ace hubs.
