If my head tube is 115mm and my stem has a stack height of 40mm will a fork with a tapered steerer of 190mm be long enough?

Will need some kind of reducer headset as head tube is 44mm ID, just not sure what stack height these headsets have

if the fork is 1 1/8" you can get headset cups and bearings that sit within the headtube (assumign fork crown will clear downtube) so stack height of headset would only be a few mm more than the headtube length.

like this;

so you just need to add the stack height of the lower cup - I reckon you'll have enough with the numbers you gave though.

[edit] I shoudl have read the post and I'd hav seen 'tapered' mentioned!

This tapered conversion headset for straight 44mm headtubes has a 20mm stack

115+40+20= 175

so you should be fine

Thanks both - looks like the CK Inset 7 has a stack of 22mm but I might use an Easton stem with 36mm stack so yes should be OK
