1. Am I right in thinking that MTB and road ones are interchangeable? Lets not worry about cage length and tooth capacity, just the shifting.
2. Do SRAM have different ratios between different "speeds"? Eg are 9 and 10 speed interchangeable?

10 speed SRAM road and mtb mechs are interchangeable, but 8 & 9 speed use different pull ratios.
