Will a Shimano XT M8000 derailleur and shifter work with a Sram PG1130 cassette? Think of a Sram cassette because it is all steel after suffering with premature 42 tooth alloy sprocket wear.

I think it will, i say think because i havent tried that exact combination, but i do have xtr mech and shifter on sram x01 11 speed cassette

Info gleamed off the web indicates that both SRAM and Shimano mountain 11 speed cassettes have a 3.9mm cog pitch, so they should be compatible.
