Puerto Pollenca is a popular spot as a training base. Been there myself many times. There are so many routes to do.

We usually do Puig Major a few times, either straight up past Pollenca old town or via the Lluc climb (via the lovely 'garden' road, plus the Lluc climb is my favourite for views)
Once up the top you can go down into Sa Colobra and do the tough climb back out, or for a longer ride head on to Soller and ride over the Soller climb to Bunyola. From Bunyola you can immediately do the Orient climb or head to Santa Maria and home the flat way (ask for the 'pipe road', a boringly long stretch of quiet road to Sa Pobla but its the best route).
The Soller ride is good ride to do in reverse as you get to ride up the Puig Major the hard way.

Other popular rides are to the monastery climbs of Randa and San Salvador (SE of the island). Not short rides but well worth it on a clear day when you can see the whole of the island at the top.

Porto Christo on the east coast is a nice place to visit but so far we havent found a particulary good route there. You can take the main road through Alcudia, it's popular with cyclists, but it's not my favourite. Too busy.

For a short ride take the Formentor road to the light house at the end. Can be busy though and take care as you get close to some big drops!

My favourite cafe stops are:
Petra. Head to the centre. Not easy to find but well worth it. Lots of cafes around a central garden area.
Alaro. Only one cafe but a nice bakers shop too and just a lovely place to stop, either before or after doing the Orient climb.
Lluc monastery.

There are plenty of others and I've found some of the best food in small towns that aren't tourist spots.
