I'm running Stans Flow EX rims on Hope hubs on the 29er hardtail for long distance bike pack races, trouble is when the bike is loaded with my kit and me the rear tyre runs pretty flat so I whack it up to 60 psi and over time it loses air and the sealant starts coming out as well, the rim says it's good for 40 psi and the tyre Maxxis Ikon 2.2 is good for 60 psi, the tyre doesn't leak unladen and when it's run at 40 psi so I figure I just need to get some different rims but trying to find the max psi is a nightmare, any suggestions please ?

For that usage on my 29er I'll use 25psi front, 28psi rear. I'm 85kg and I'll have 5kg or so kit.
The maximum pressure is really only for seating the tyre not for general usage.
60 psi on a tubeless tyre does seem a tad excessive. Mine would blow off the rim long before I got to that figure.
Somewhere in the 20s is a bit more popular.
Take the tyres off, re-tape them and refit with fresh sealant.
The idea of running more than 30psi on a tubeless MTB is bonkers. I doubt you'll find tubeless MTB rims with a higher psi rating because there's no reason on Earth you'd want to run 40+ psi.
As above I wouldn't put more than 25psi in my tyres. Fwiw on my bikepacker I use 2.25 smorgasbords on Velocity Blunt SS. If taking off my SIDs I'd try and get 2.4s on instead.
When the going get a bit sketchy I lower the pressure down but when your on a fire road / tarmac the tyre just doesn't roll as well, if the rim of my dreams doesn't exist I guess I could go for a tyre with a stiffer side wall.
If you really want to run 60 psi (and god knows why you would for any bikepacking application) just run tubes.

I know a few people who use Ikons for ITTs and they don't have anything like 60psi in them (thought I'd better check if @ianpv used them on the Spearfish I bought from him but the shot shows he's on Bontragers). The Ikons are a decent rolling tyre, I use Bontrager XR series and the XR2 is very similar to the Ikon and with the pressures I stated in my earlier post above I'm fine on both tech and smooth fire road/tarmac.
I used bontrager XR2 rear XR3 front on the HT550 I think Bob. Really good tyres, tougher than ikons but still roll well. But, I've used ikons on the cairngorm loop and for racing xc - they're good too but I'd run the exo casing for bikepacking I think.
XR3/XR2 is what's on the Spearfish at the moment! OP isn't saying which casing his Ikons are, looking at a few shots of HT550 riders like Alan and Javi it does look like they use the EXO casing.
Well it sounds like I've been doing it all wrong ;-( thanks for your advice, at least I don't have to buy new wheels which is a plus, will be running no more than 30 psi on the HT550 this year 😉
Sorry, yes I run EXO casting, if only I knew how to put a photo on hear I would chuck one on !
