If you wrap it the wrong way it will loosen as you put pressure on the tape, and/or you'll end up catching the edge of the tape and lifting it, or some such thing, I seem to recall.

Somebody will probably be along to say different but, I always wrap bars with the thought about the twisting forces I'll be applying to the bars when under pressure.
When either pulling on the tops or hoods, or twisting on the drops, I want the tape to try and tighten in such scenarios, rather than unwrap itself.
Really not sure if this is the main reason or just my interpretation.

The idea is that as you go from the centre the inner wrap is over the outer wrap.

Start at the end of the drop, work inwards. Some people get all het up about whether it's wound clockwise or anticlockwise but that's getting far too detailed.

Id be inclined to redo the tops using figure of 8 method to change direction at the hood.

You're probably correct, but that's not clear. Does the tape go left to right as it goes under the bar, or as it goes over it
Some things are tricky to explain in a short phrase so, best take advantage of the many videos that are available, online...
I have never taken any notice of the 'rules' and wrap different ways as don't give it much thought but then I have never
- unwrapped the tape while riding (how would I if tape is applied tightly and taped at the end?)
- never put that much twisting pressure on the bars (why would I need to do that?)
The edges are more likely to roll on the drops if the exposed edges face up.
You can "unwrap them" if you twist your grip not that they come undone just they the tape can get loose in areas then it starts moving around.
Neither is a real issue if the tape is tightly wound, it only happened once to me with bars loosely taped by someone else.
If it works, who cares. I couldn't live with one side finishing nearer the stem like that but I ain't riding it so just go ride the bike.
Plus extra points if you've not used cheat strips and there's no gaps at the hood sides (will need photographic evidence to award those points though!)
Looks good to me - I worked as a shop mechanic and always did them that way, wrapping them from the bottom inside-out. Depending on the shape and position of the levers, figure-8 around the bar clamp and along to the middle. Key to stopping them unwrapping was maintaining stretch in the tape so it grips itself/ edges stay flat - some tapes are better than others. Warm-up tape on a radiator on a cold day if needed. Wrap electrical tape around the bars first to hold cables and you can wrap/re wrap the tape many times until you’re happy.

I went from the Sonder Bombers because I found the yours uncomfortable to some much less flared Level bars but found that I missed the flare of the drops. These are less extreme and keep the hoods in a better position. Hopefully.

I don’t remember it looking that uneven when I’d finished so I think I might have redone the RHS - I’d have to go and check though because I can’t remember! 🤷🏻♂️
