I haven't touched Shimano for years but a few test rides plus seemingly low prices have convinced me to go either SLX or XT on my spare bike.
Which model numbers should I look out for? Any decent advances on the new M8000 stuff?
Will all of the above work just as well without Ice rotors?
M666 for slx and M785 for Xt.
No idea on the latest ones. You can use any rotors that are the right size 🙂
As far as I know, they all supposedly fail after about 2 or 3 years in one way or another.
I have both M785 and M8000, the newer ones look nicer and have less of the initial "step" that characterises the 2011+ ServoWave levers. If you find a good deal on the 785s you won't be missing much.

Supposed to have fixed the seal swelling (sticky lever) issue on the M8000.
What's the most I should pay for a new pair?
Seeing XT sets at £90 and SLX around £75 which seems bonkers. Must be worth bobbins 2nd hand?

I was after a set of XT recently and the cheapest I could find new was £105 without rotors.
Got some mint second hand ones for £78 posted off eBay

yeah M8000 seems pricey. eBay is bringing up 'sets' at the prices mentioned
Got a set of SLX M666s which are five years old and have had only one bleed and are superb.
Two year old Deore M615s which are faultless.
Brand new SLX M675 which again are great. Better than the good Hope X2 they replaced.
I had a set of the old four pot XTs 10 years ago and they were fantastic too.
So I think it's a Yes for Shimano from me!
Have had awful Avids and average Maguras too, so I'm confident it's not a fluke. They use mineral fluid which is a bonus and pads are easy to get and cheap. What's not to like?!

That's the one that came after I spec A I guess....
I spec refers to the bar clamp. I spec b brakes can be mounted to I spec b shifters, naturally. My SLX 675s have been great.
Still run my old XT 4 pot brake on the rear, been faultless and never needed touching in all the time i've had it (other than pads of course) been to Morzine and Les Gets twice with it as well.
