I've got a bar clamp slx m7100 righthand shifter. Is it possible to just unbolt the bar clamp and replace with an i-spec ev mount, or do I have to replace the whole shifter?

You'll also need the shifter cover that the i-spec kit bolts to. No idea why they get sold separately, but they do.
EDIT - that was me going i-spec to band on at least. Band on to i-spec might come complete, but there's no need to junk the whole shifter.

You shouldn't need to buy the shifter cover as they are the same part number for both band on and I-Spec

Hmmm, given the price of the adapter it's probably going to be cheaper to buy a new shifter and sell the clamp on one.
That was what I found when I did similar for an XT shifter, and of course you get a brand new shifter into the deal as well 😉
Dont know if it helps, but i've just done exactly that with an SL-M6000 10 speed shifter, after I accidentally ordered an i-spec instead of a band-on after breaking my band-on shifter
It was a 10 minute job to open them up and swap the mounting brackets over
