I, like many people, am bang on the height divide between M and L on the bike I fancy. I do have a proportionately longer torso to leg ratio, not gibbon arms but noticeable. Does the team think I would be better off with L than M?

Can you do that? order a frame, build it up, ride it, send it back for a different size? Or with a full bike?
I am a bit like that and have got an M, which is fine for me, but that is a design where the L is proper long.
Watch out for seat tube height and dropper post travel, this may constrain you to an M for older-style designs where L means 19".
I'm usually a medium all day long. But took a gamble on a large Whyte, I couldn't fit any longer dropper than a 125 but given that I have no problem buzzing my arse off the tyre as it is that's a none issue.
I'm often caught with that same issue. Ended up with an M for more playful rides and a large for with less travel for mile munching duty.

I was borderline M/L on my T-130.... I have to squeeze the 125mm in on my medium.
My Nukeproof AM (2015 prior to top tube growth) is a large and I have more seat post exposed on the same dropper!
At 5'11" bike manufacturers recommendations generally put me on a size large mountain bike. I can't stand how long bikes ride and generally ride small or mediums.
Buy the size you enjoy riding and ignore everything else.
Same as you OP, I'm 5'10.
My bike isn't a super long model (120mm xc/trail oriented FS bike) and I am very comfy on a large.
Medium would have been too short.
If I wanted it shorter I could get 20mm off the stem length.
