Why do a lot of single speeds only have one brake? Or is this just on fixed wheel bikes?

Generally only fixed wheel bikes, where you can push back on the pedals which acts as a rear brake

Just fixed, unless you're my mate Chris, who does it off road to save on brake pads 😉
