Having changed bars and frame/forks I find that the hose on my Ultegra brake is now too short
Is there a Shimano kit I can buy with all the bits to fit a new hose?
Presume I need hose, oil, connectors, bleed kit, ???

I haven't seen an all in one like that. You should just need hose and olives + a bleed kit. Bleed kit should come with the oil - the Epic Bleed sets are good.
