Most/all the latest shorts seem to be over-the-knee and longer than my somewhat old-school Endura singletrack III shorts, which are perfect for local bridleway/towpath/gravel/road type rides that end up in the pub.

The singletrack 3s are unobtainable but are there any other shorts that equivalent? (above the knee and not too baggy)

Last pair I got were these:

although didn't buy them from there.

I'm quite short, so often shorts fit me like clown trousers.
But, these are actually pretty good. A nice, light material, seem well made although not really worn them a great deal to test durability & while the leg is fairly loose fitting, I wouldn't class them as baggy.
They are fine with some soft knee pads underneath.

I have some FWE shorts that I think are the predecessor to these https://www.evanscycles.com/fwe-mtb-baggy-short-EV351878
They aren’t flappy baggy and fit really well. BUT I’m not sure what the new version is like.

Short shorts you say? Look to the running section of your local sports emporium.
These for a mere £18 are bloody lovely...for running at least.

I buy the Decathlon ones that are top of the range (but still quite cheap) - they're stretchy so I go a size smaller to get them above the knee and not too baggy. On me, they're just a CM or so longer than where bibshorts come to. Barring a nasty crash they last forever.
They've changed a bit since I got the last pair but a quick look suggests they're currently called ST900.

I've got some Morvelo Overland Shorts which have a nice slim cut and come to just above the knee. Spendy at RRP but think I got mine for about £55 from CRC/Wiggle.
