Thinking of making front-fat an option for my Stooge -- the Jones SWB forks would be perfect, but I can't see anything else similar (435mm length, 55 offset).

Anyone know of anything else?

Are you needing taper or straight steerer?
I'm not sure of the numbers but I use a straight steerer On-One carbon and there is an ICAN taper carbon on the other fat bike.

Exotic may also be another to try.

Which model Stooge? And what size fat wheel / tyre combo?

It's the MK4, so the trickiest as it has wacky forks: 80mm offset and 455mm long, that's with the 66deg head angle

I figured a slightly shorter fork with a smaller offset would be perfect (like the Jones), but neither a longer fork or one the same length but with a short offset (i.e. Surly Pugsley) would work

Oh, and it's a straight 1 1/8" headtube

Ask Andy about the Scrambler boost fork, less offset but I'd expect a 26" X 4" fat tyre to fit. I think he recommended less offset for running 27.5+ tyres front and back on mk4s

Have you run the figures to see the effect on the trail and wheel flop?

Currently you have 79mm trail and 29mm flop.

Add Jones fork and you change the HA slightly to 67º
Then your figures would be 99mm trail and 36mm flop

Whereas on the Jones with a 70ºHA they are 78mm trail and 25mm flop which are similar to your current set up.

Of course just about anything is rideable once you're used to it, but you may find that too radical a change.
