My daughter's new bike has come with basic cage style pedala, but I think she'd be better off with an MTB style flat. But she doesn't wear pads so I fear what those pins would do if she slipped. My other daughter's bike has nylon pedals with plastic knobbles instead of sharp grub screws. Where can I get some more?

Sdg slater, has pins but not sharp. My 5yo loves hers.
Race Face Ride. Blocks not pins, so shin friendly but not as grippy, but practically fine with heels-down and not being wet. Choose your risks etc. - slip more hurt less, or slip less hurt more.
I re-pin with something less sharp depending on pedal, or turn bolt head up rather than pin side. Only slightly less grip but zero ripped shins.
I did once try ^ with some 5mm M4 cap screws. Was ok, but I figured the crash from a pedal slip would be probably be worse than ripped shins.
Honestly don't worry. My daughter has slipped once on her Wellgo's and earned a graze for her trouble. If they can't slip then there's less chance of them hurting themselves in the first place.
By comparison most, if not all, of my shin scars are from years of shitty nylon pedals. Regardless of whether they are plastic or metal pins are safer all round.
DMR V6s are pretty big pedals so would depend on how old/big your daughter is. Also they’re pretty much disposable as they tend to wear out and can’t be serviced properly.
My kids are using these. Forward Affix Junior as the V6s were too big for a first pedal bike and not very grippy at all. Also on a 3 year old’s 14” wheeled bike they couldn’t lean it over when cornering with the huge V6s without clipping the floor.
All my shin scars have been caused by either crappy pedals with no grip.
