Just ordered some for my medium Solaris, Are the hoses generally ok out of the box or am I likely going to have to shorten them?

You will have to shorten - they're normally at least 20cm to long, worse on an HT.

I didn't shorten them on my HT to allow for a drybag on the bars, this was after shortening my previous hoses to a really neat length that totally got in the way of mounting a drybag.

If you don't plan on bikepacking, yeah you'll want to shorten them, but you could pretend you do plan on it to excuse your overlength cables/hoses.

They're usually 1000 mm front and 1800 mm rear so unless you have a 200 mm travel tandem they'll need shortening

epicbleedsloutions method always works for me

No, shortening doesn't normally need a bleed. Should come with spare olives and plug doobry thingys.

Measure, pull out carefully (oo-er), cut, install. Ride 🙂

(Not necessarily in that exact order)

Yes as the caliper end is a crimped end and you can't do it yourself.

I’ve shortened 2 sets of Shimano brakes (slx and Deore) and never had to bleed them after. Just be careful when cutting and keep the cut end higher than the caliper.
