Sram don't have them... What are they for?

I think they are there both to guard against bolt overtightening and also act as a secondary insurance policy against loosening bolts.
There's a school of thought that if you use loctite then arguably you don't really need them.

Genuine shimano rotor bolts are a tri lobe / triangular shape, they are used in conjunction with the ‘8’ shaped shims where the an edge of the shim is bent over the flat edge profile of the rotor bolt stopping it from unscrewing itself.

Shimano do seem to have a particular fear of brake things unscrewing themselves: the figure of eights on discs, the plastic clips for caliper bolts, and the peculiar pin system on flat mount calipers.
My bikes all rely on threadlock, and I've not had any problems. Except for the pads coming out of a caliper once because I forgot the clip that goes on the bolt and possibly the bolt too.

A friend discovered some bolts that were loose out on a ride. I suspect they weren't properly tightened in the first place, but he'd been using the wheel for about 6 months, so not really sure. Apart from that, no, they seem to stay tight no problem.
I've seen forks scored by loosening rotor bolts. Badly scored!

That said, every time I take something SRAM apart I am reminded why I should just be riding anything but SRAM.
If only shimano paid that much attention to the bite point adjuster and seals, I've never had issues with loose rotor bolts, ti bolts installed with torque key not even threadlocked as given me zero problems.
