After breaking one of the (admittedly slightly crappy) levers on my Magura MT5s I managed to get a good deal on a pair of new M9000 XTR levers to try and see if I can make a best of both worlds hybrid. Question is do I se Magura blood or Shimano mineral oil or does it not matter?

Try Shimura or Magano, either should suffice.
