Chainring - does the chainring need to be M8000 or will M7000 also fit my cranks?
Chain - Will either an M7000 or M8000 chain work? Does the answer change depending on the answer to the chainring question

Pretty sure you can mix and match 7000 and 8000, so you can have either crank and definitely either chain.

Shimano say yes, you can mix chainrings. And either chain will do the job fine.
