I need a new one but they are over £60. Looking at the original it seems to be just a 104bcd ring bolted to a carrier. Is there any good reason why I shouldn't just bolt a new N/W ring to the existing carrier?

I'd use a steel ring, I do this even on a non eeb.

I use normal ali rings fine, wear doesn't even seem to be too bad. I'm getting 2 years out of 1 cassette, 1 chainring + 3 chains.

don’t they need to be specific shimano 12 speed for the 12 speed hg chains?

What about Superstar 104 12 speed rings - 30% off just now so £25 - can't comment on longevity on eeb (only used them on "muscle" bike)

The OE shimano 11spd ones don't play with the 12spd chains.
