I've got SRAM mechs on the MTBs which mostly just work.

The graveller has a GRX 810 on it, and I'm dropping the chain more often than I like. (bike mas new in April, has less than 1000miles on it and no obvious chain wear)

I've played with tightening the band on the clutch. The problem is that it can feel properly stiff on the stand in the cellar (to the point where I can really feel the drag when I change down a gear), but then when I'm riding it barely seems to be doing anything.

Sounds daft I'm wondering if they're temperature sensitive - the cellar is a good bit cooler than ambient temp at the mo, and then the clutch may be getting warm from friction as the cage bounces around when actually riding, leading to the band loosening off just a fraction?

You did use a torque wrench to set up the clutch (it's in the dealers manual 1 on their website - I couldn't get the link insert to work!)?

Ha. No. Didn't even know there were dealers manuals for rear mechs!

Having had a look, OK, 2.6-4.2 Nm to get it to move... (its actually an 812 1x mech, not an 810)

Is your chain the correct length? - worth checking. I was blindly just copying the length of the chain that came off my bike from new and then one day decided to check it... two links too short! Yours could be too long maybe??

What chainring? As above - chain length worth checking too.
