Pondering a move to going 1x on the bike. Currently 2x deore cranks with a 104 bcd. Looking at 30 or 32 chainring from superstar but vaguely recall there being some difficulty with shimano and small chainrings.

I use 30T on both Shimano and Sram cranks ,(both 104BCD). Have had no problem at all with a variety of makes from Hope, Superstar and On One. The chain can get close but it misses. 10 speed by the way.

Should be OK, but you probably can't get an oval ring.

32t should be fine.
You can get 30t round or 32t oval, they have stand-offs and threaded holes built in to keep the chain away from the arms and are usually a few quid more. IIRC Absolute black did a 30t oval at one point but it looked a bit of a faff with smaller bolts and eccentric nuts and inserts on the smaller pair of bolts.

I haven't looked but I'd assumed oval rings would work with those "asymmetric" Shimano cranks (like the M8000)?

Was looking at the superstar 30t,its threaded and looks to have the spacers machined in. Mostly peak district so would be lookin at an 11-42/46t cassette to retain the climbing ability. Currently an 11-36 cassette 2x10.

only those with the BCD to fit.
The Deore should just be 104bcd "square/equidistant"

I use a 30t on a Shimano crank, 104bcd, no problem

Couldn't find one for my M7000 chainset when I looked, but that's not a categorical "no" obvs.

Bit of a headscratcher what the practical benefit of asymetic bolts were for Shimano.

Yes, I use them and they work fine, with the added benefit of idiot-proof installation as you can't get them 90 degrees out.

Looking at the 30t round from superstar and presumably need these Chainring bolts

Why would the assymetric positions make bolts work loose? I've had oval on M8000 a few years with no issues. Various folk sell them inc Absolute Black

Nope, just re-use the ones you take out (without the nuts obvs).
