So I have a new bike I mind.
I have a 2016 105 carbon rim brake bike (Eastway Emitter R2) with carbon 50's and am wondering if there's a decent second hand market for rim brake bikes or not?
Or do I scrap my ageing 2013-turbo-mounted-Defy and put the Eastway on the Turbo, and sell the wheels?
Not sure what you're asking, should you sell or scrap a (not particularly ancient) road bike just because it has rim brakes?
Despite the ongoing hype, not everyone is keen to throw away still working rim braked bikes for disc braked versions. Some people are even acquiring them as relative bargains.
There's enough of a 2nd hand market for road bikes that you'll shift either of the bikes you described (you're aware used bike prices have been pushed up to some extent by Covid/new part supply chain issues I assume).
If in doubt have a look on eBay, noting that it's January payday weekend... you won't fully fund a brand new disc braked road bike from the proceeds but it should make a reasonable dent...

I've found a highly regarded Ultegra (mechanical) aero disc endurance road bike on offer in my size, and am wondering if I should snap it up, as undoubtoubly bike prices will continue to rise next year.
Thing is, I like my bike and it has history for me (MTBer, Eastway Circuit etc) and I don't really want it to be flogged off cheaply or actually corroding on a turbo for that matter.
Bit of a first world problem.... maybe even FOMO!
If you’re after a used bike look at Cycle Exchange, they also do trade in depending on the bike.

You make a good point Tom, the nagging doubt in my head is that ultimately I'd be paying £3000 for a set of disc brakes...
That's my thoughts too. I still have my CAAD4 from 2004 and just bodged an 11-28 cassette (allong with new chain and chainrings) onto it, just needed a lot of b-tension.
I'm not really sure even with all the "this is ..... seconds quicker on the Tuesday night 10" would even apply to a bike old enough to have a straight headtube (less frontal area) and round tubes. And the brakes still work.

Discs are for the kids.
Think there are quite a lot of roadies that don’t want anything to do with discs / di2 and are hoarding Ultegra group sets that feature neither.
I won’t be selling my Defy SL for those disk things. Your Eastway is less desirable, but if it has decent kit and wheels, it will sell. Would make an excellent first race bike for a 4th cat crash fest 😉 . You definitely don’t need disks in a circuit race!

If you've seen a good deal I'd do it now, yeah. Used rim brake bikes won't gain in value and new disc brake bikes won't get any cheaper.
It's not just that the new bike will have disc brakes.
It'll probably take bigger tyres and you can run tubeless - and you'll feel more improvement than you think.
If you fancy a new bike and have the money then spoil yourself. Life is too short to worry about such things 🙂
Also, leave the Defy on the turbo and keep the Eastway for nostalgic reasons. Hang it on the wall.
