Currently running stock High Roller front and Rekon rear. Fancy trying Minions or Schwalbe but what's the best all year round combo?

I'm running 2.8 Minion DHF front and 2.8 Rekon+ rear which works for me. That said I'm in the Dark Peak neck of the woods, so proper mud isn't really a big issue. I ran a Nobby Nic 2.8 up front for a while and it was okay, but the DHF has, I think, better grip on rocks thanks to the rubber compound, is a little more robust and just more confidence inspiring all round.

DHF, DHR works for me on a hardtail.
If it's proper dry I'll stick a WTB Ranger on the rear.

Running a 2.6" Bontrager XR5 up front & a 2.8 Rocket Ron on the rear. Was using Nobby Nics 2.8 but found those a bit draggy. Had RR on front for summer but whilst quick it was sometimes slippy in the dry leading to the "fast dab". All above on a hardtail.

Not really no.
Got a 2.5 DHF in DD max grip that's far more draggy on another bike.

2.8 magic Mary front and dhr 2.6 rear.

Just ordered and fitted so will report back!

I love my 2.35 magic mary’s on my full suss BUT i hated my 2.8 Mary’s on my 909....
Tread is spaced too far apart so it would unexpectedly let go quite a lot in wet conditions....
Was expecting the same predictable grip as the 2.35 but it was nowhere near the same.
I think the stock set up is good enough for year round riding to be honest

As a maxxis 2.8 user, I think you're already on the best 'year round' combo. DHF probably a bit grippier in dryer conditions at the expense of not being as good in mud. The ikon makes a nice fast rear for use in the summer months and if it really dries out, a rekon in maxxterra compound works well on the front.
