What's a decent saddle and seatpost set up weigh? Mine's at around 600g and think I should be heading down from there...
To be honest mate,it really doesn't matter. Unless you are beyond Olympic standard you'll never know the difference,in my opinion anyway 😉

depends on seatpost length and rider weight - 400g is feasable but 500g for the two with a 400mm post would be about the limit to still be strong/durable for me.
Specialised Phenom SL 143 saddle (wider version) - 195g
Thomson Elite straight seatpost - 230g
Total - 425grams and so far been ultra reliable.
KCNC sc-pro and a Sell.Ital slr-xp 385gms. plenty strong enough for me and I'm over 13st. I cant see the point in weighing the bike down for no reason.
438g on the hardtail (Thomson/WTB rocket V SLT)
496g on the xc susser (Syntace P6 Alloy/Charge Spoon Ti)

Matt - iirc a 400mm thomson elite post is closer to 290g
and hollow Ti rails are far from durable.
I used to snap solid Ti rails regularly (and pretty quickly)

As said plenty strong enough for me especially on my full suss xc bike. If your on a h/t and have a habit of sitting down over bumbs and not pedaling it might not be. Everyones got to find what kit works best for them. But not all light stuff is fragile there's some good light stuff out there.
I-Beam carbon 27.2*400 = 193g
I-Beam Bel-Air seat (w/o bag clip) = 195g
I could get away with a 300 post, but went for a 400 one to ensure no problems - so 398g all in on my 456Ti.

Like GW says it depends on all sorts. I weigh nothing so I get away quite happily with a Charge Knife (220g measured) and a Raceface Next SL (can't remember how heavy, 200g and a bit I think). Could go lighter but that's proved durable and comfortable.
Course, the rest of the time I use a gravity dropper which weighs about 540g
