Looking at a used shock, and looking at what I might need to do to change the tune (just following the piston tuning guide rather than going rogue). Quite comfortable with the idea of changing the shims but, where do I buy replacements? Ideally would like to get what I need before stripping the shock but not sure if ‘generic washer from b&q’ with the right sizes is going to be the same thing.

Anyone do this and can advise?

Depends which models mate. Some are just spindly bands, some a bit more... Ebay usually for me.

If it's the compression / rebound shim stacks you are referring to then you need a 'rear shock tune assembly'. These are listed under the relevant shock in the spare parts catalogue then you can search by the part number. Alternatively, somewhere like TF Tuned will probably stock them and will be able to advise.
