The drivetrain on my Roadrat needs replacing, and as it happens I a) want to put gears on and b) want to change from drop to flat bars.
I have some old Deore shifters, an old Deore mech, and an old MTB riser bar*. If I get another Alfine chainset and a 9 speed cassette I can just use it as single ring, right? Just after a check that I'm not missing something stupid really.
I'd need some new brake levers too, obviously.

wont you need a mech hanger ?
your set up may vary but im certain mine (which ive jsut sold) just had plain horizontals with no hanger ..... although it was an alfine full bike build.
I run mine just as you want yours.
You need a derailleur hanger. Mine is a Cotic branded one which sits in the sliding dropout slots. I think DMR make them as well.
For a single ring up front you may want some kind of chain device. I have a bash ring which does the job OK. Or a clutch mech will do the job.
Mine has the Cotic chain tug built-in hanger bit so no problem there.
I had wondered about the chain coming off though. Do bikes running newer 1x drivetrains all use clutch mechs then?
I'd quite like to use the old mech I've got rather than get a new one.
I did just that a few years ago with mine, except used an old, spare front mech to act as a chain catcher. Not as clean as a NW chainring or a clutch mech, but was cheaper.
