on a sliding dropout frame, what size (without an adaptor) rear disc rotor should fit??? 160 seems too big, 140 too small......

Eventhough the mount is IS, I don't think it was ever designed to work with an IS caliper. Any PM caliper will work with a suitable adaptor, as below:

That is a 160mm rotor; I've never had an IS caliper, so maybe someone else can shed some light on this.

Apparently they did came in different flavours (left - 160/ right - 180), but if you say the 160 rotor looks too big then probably the caliper is 160 and should work without an adaptor.
