So, was thinking about this Giant 29er i have here and wondering if the bars i fitted for comfort were playing a factor in the turning and what sort of a factor/effect.. ?

The standard Giant bars are 0mm rise and i think about 680mm.
So, apart from the comfort factor, what other things will be influenced and in what way by the wide risers ?
On paper
-Better stability with speed\bumps (you have more leverage)
-Steering might feel a tad slower
-Arms will be further apart so will bring you closer to the front end as you'l have less of a reach (might be cancled out by the rise). Which will move your body weight further forward.
Give it a bit of time and see what you think, then swap back to the old ones to confirm which feels best. If you want something in between then cut down the wider ones. There's not really a right or wrong, just what works for you.
I have bought some wider bars for my bike and I definitely feel more confident. In contrast my brother has some narrow carbon race bars on his anthem, and it feels twitchy (think more like riding a brompton).
I am not very fashionable bike kit wise, but wider bars makes a difference. Too wide and you might be giving the local trees a shave though.
