What riser bars can you get with only back sweep and no up sweep?
I only want one bend like you have with a flat bar, but I need more height and there aren't that many 800mm flat bars.Is the only way to achieve this flat bars with a higher stem?

I think that riser bar manufacturers cite upsweep and backsweep on the assumption that the bars are set in the stem with the "riser" part of the bend in the vertical plane.
All you have to do to get backsweep only is rotate them backwards from that position by the quoted upsweep figure. They will look a bit odd I suppose, but it is generally only a few degrees.
ETA riser bars are always going to have to have two bends in them otherwise they would be flat

A bar with only one bend is a flat bar. It makes no functional difference whether you achieve the rise through the stem or by adding another bend to the bars.
