Thread is stripped (slightly) on one of my fork caliper post mounts (lower of the two). Standard bolt is spinning in the last few mm of tightening, but a longer bolt with some washers appears to be holding fine.

I imagine I'll have to tap in a helicoil, but I've just noticed it's stopped raining...

Will I die horribly on some XC bimbling?

Rather than a helical i'd first run through the thread with a tap

Wrap some PTFE plumbers tape or fuse wire around the threads to see if they hold better? Retainer compound e.g. Loctite would also help hold it in place.

The plumbers tape tip could be a good 'un.
