Try Middleburn, big choice of harder metal, not cheese like the Shimano ones.

Not sure if the standard XT replacement is anything fancy but you can't go wrong with a steel LX/ SLX granny ring. I havn't worn one out yet and I spend a lot of time in the granny ring.

Think i've got a race face steel on mine. Anything steel will do, outlasts the rest of the rings by about 3 times!

Steel it is then. Deore sounds fine as it's cheap and burly.
