I currently have an older bike fitted with a Shimano FCM510 chainset which requires replacing, acknowledging that technology has moved on what is a current compatible replacement for that model should I wish to remain with 3x9?
The rear hub is a older Hope XC model, what cassettes would this accept, should I wish to consider moving over to 2 x 10, or similar?

XC hub should accept an 11 speed MTB cassette if you so wished. It will not however accept a 11 speed road cassette.
Current compatible replacement would be something like an FC-MT300. Your hub will take 7,8,9,10 or 11spd shimano mtb cassettes.

Just done exactly this and moving all the way over to 12 spd (Sunrace 11-50 HG compatible cassette). Some problems (diff thread) but I think that's a seized bearing not incompatibility.
