I have an old pair of black Shimano XT cranks with the usual heel rub on it. Is there a quick and easy way of removing the rest of the black coating to make them silver?

Oven cleaner is worth a go. Failing that, wet and dry.

bit of wet mud and the heel of your mtb shoes.

I used caustic soda to remove the anodising before polishing up an old set of Saints, came up a treat!

As said, oven cleaner however I'd be more inclined to go with wet and dry than the chemical route.

I bead blasted mine. Then repainted black followed by helicopter tape.

I've wet and dried in the past, and used metal polish to slowly take of the worn anodising. Chemicals may damage the finish. It isn't quick for a good finish though.
