I'm thinking something like way of the roses, something easily nivigable and fairly accessible from London to do for a work weekend away. Probably 30-40 miles a day, with a stop at a hostel overnight.

can you do that on road tyres? or touring tyres anyway, 32mm or so
Round the IOW road route. Nice roads with great views at times, 65 miles in total.
Will this involve people who normally never cycle?
From London you could cycle out to, says Tanner's Hatch - stay at the YHA then cycle down to the south coast the next day and get a train back. Depends upon how many of you there though...
I would only do it on a MTbike or a cx bike tbh, so no.
