(largest cog – smallest cog) + (largest chainring – smallest chainring) = capacity

It's the combined total of the difference in size (in teeth) between smallest and largest cogs and the difference between small chainring and large chainring.

Shimano also often quote two maximum cogs sizes: one for 1x systems and one for 2x/3x systems.

Difference in biggest and smallest sprocket added to difference in biggest and smallest chainring.

So on a 38/26 double with 11-32 sprocket the total capacity would be 38-26 + 32-11 = 12 + 21 = 33

As long as the total capacity of the mech is higher you are good.
