Is the difference between a BR-M495 front and rear mechanical caliper just the mount? So if I get two fronts from On-One, I can convert one to a rear by getting a different mount (or using a 180mm rotor)

Yes, they are both Post mount by design, so will fit front or rear with the correct adapter.

thought so.

So I assume a front 160mm mount is the same as a rear 180mm mount no?

thnk thats how it will work. Think Ive got a spare 180mm rotor lying around, if not a 160mm mount.

IME that barely qualifies as a brake.

You've got that the wrong way round.

180 front =160 rear.

ah. doh. quite right. looking at the shimano techdoc again, the rear mount has a larger offset for the same 160mm rotor dia.

OK, so Ill need to make sure Ive got a 180mm front adaptor (or 160mm rear) lying around and use a 160mm rotor at the back.
