What makes an XT caliper work with different sized rotors. Is there a different mounting bracket which puts it in the right place with respect to the rotor or am I missing something?

Yes, you need to buy an adapter. Look on CRC under 'disc brake adapters'. They cost about £7 usually. If your XT caliper is the new post mount variety it is a little neater as they are meant to be mounted on an adapter for any disc size as most frame run an IS rear mount.
