I'm staying betwixt (love that word ever since the crimp and splash episode) the quantocks and mendips in a couple of weeks and wondered which area was best if wet. I'll be on my Spark and will be looking for sweet single-track but maybe not so much black downhill stuff.
Quantocks all day. The surface holds up well and if you do get wet then you are more willing to go for it on the stream crossings. Mendips are rooty and muddy so really suffer in the wet. The bits around the trig point will be ok but if you have a choice then head to the Quantocks

I say that as a Mendip local.
Definitely the Quantocks.
Quantocks for sure, although some of the trails can turn into streams, there is not much mud, unlike the muddy Mendips.

Does anyone have any good gpx files for a 3-5 hour ride on the Quantocks (preferably with somewhere to park at the start of the ride)?
Check out the MBR route for Quantocks then add on the Southern Enduro Triscombe route that I uploaded to Strava. Together they'll make a big old ride with plenty of technical stuff.

Fun, but I've rarely been as muddy!
But, in answer to the OP, Quantocks all the way.
Though if it's really wet the Triscombe stuff isn't muddy, but is treacherously slippy in places.

Quantocks never crashed...

I have found one 20 mile gpx route which is mainly bridleway. Would it be best to stick to bw's for someone new to the area? Looking at the OS maps those contour lines look very close together for off piste-ing.
Most of the combe's are BWs and are generally all worth riding - if the route includes the likes of Weacombe, Stert/Somerton, Smiths, Bin, Frog etc then you'll have a blast.

You'll probably find the countours are 5 m interval rather than the more normal 10 m interval you get in the bigger hills. Makes it look steeper than it is (they are steep mind, don't get me wrong). However, if the contours look similarly close in Wales or the lakes, then that really is steep.
South Eastern end (triscombe/cockercombe/great woods) is plantation type enduro riding. More DH/enduro tracks than you can count.
North west end is natural, open on the tops, woodsy at the bottom. BW’s running down the Combes.
You might get muddy but it’s never claggy mud.
