If making the change from 3x9 to 2x10, do I need to change front rings, or just drop the big ring, stick a bash guard on and set the limit on front mech to middle ring?
Or are these bits specific to 10 spd too?

Yep that'll be fine. Chain rings only care about the inside diameter of the chain, which is te same for 8,9,10 speed. Also, you won't 'need' a bash ring, mech should keep the chain on. Of course you can have a bash if you want though.
