If i take my Garmin 800 to Tenerife with me biking will it still record exactly where ive been if i dont have a map of tenerife installed?

Yes it will.
Obviously the mapping function on the unit won't work though.

Yes it will just show up as a line on the very basic map of the island on the edge.
Upload to Garmin connect to see where you have been.

Do as Dales rider suggests. When I went to Gozo last summer I loaded the Open Source map for the island onto my 800 and it worked really well, even worked as a satnav when needed.

as above, there are plenty of resources online that use openstreetmaps as the basis of a garmin IMG map - just get one for Tenerife 🙂

If I but one without maps, can I load opensource onto it with out having to pay the extra for the OS maps? I'd it that simple or does it lose some functionality?

It's that simple. The opensource maps aren't quite as good as the OS maps but for most practical purposes they are more that ok.

If you are using it for biking then you can also get maps from
openmtbmap.com for vtt centric maps or openvelomap.com for roadbiking. It's maps created with the opensource data but tweaked to give better routing for offroad or onroad
