I am going 10*1: 11-36 rear and 32, 36 or 40 front depending on conditions.

Do I go for the med cage slx rear mech? It specifies med is up to 35T, but my (abet limited) understanding previously was two rings = med, 3 rings = long

Determine Maximum Chainring Difference by subracting the number of teeth in the smallest chainring from the number of teeth in the largest chainring

Determine Maximum Cassette Cog Difference by subtracting the number of teeth on the smallest cassette cog from the number of teeth on the largest cassette cog

Determine Total Drivetrain Capacity by adding Maximum Chainring Difference to the Maximum Cassette Cog Difference

Record the Maximum Cassette Cog (the number of teeth on the largest Cassette Cog)

Work it out for yourself, it's not difficult.

Medium will be fine, especially if you plan to swap chainrings.

Medium cage has a 35t capacity as you rightly state, so with your potential difference of only 33t it will be fine. Just set your chain length up with the 40t cog fitted to ensure it's long enough.

That made me scratch my head due to the fact I'll only have one ring up front, but I got there once I realised it is about maximum required capacity. For 10*1, go as short as possible.

capacity required = (big front ring - small front ring) + (big rear cog - small rear cog)

(40 - 40) + (36 - 11)
is 0 + 25 = 25

Well, if you'll be swappnig chaingrings it will actually be this:
(40-32)+(36-11)
=8+25
=33

Either way, it's still the right size.
