any recommendations of which pannier rack and panniers would be best suited for my bike?

Have a look at the Topeak tubular racks MTX disc range .... 3 to choose from.
I got away with using a non-disc specific rack (Topeak Super Tourist DX Tubular Rack (w/o Spring)) on my Kraken. I swapped out the large headed machine bolts on the caliper mount for lower profile button head bolts and just added one slim washer for a bit of clearance to the rack mounting bolt. No problems in over 3 years .... and some pretty heavy loads in the panniers at times. Here's a photo I did for someone who wanted to copy the mount method.

Pannier bags ... I just use cheapy Halfords ... they have lasted OK over 7 years abuse, but if you do a lot of wet or muddy stuff you might want something easier to clean?
