I’m a bit baffled by all the different gearing permutations out there.

What 2 x 10 double chainset (with the lowest number of teeth across the various make / model options) & 10-speed cassette (with the highest number of teeth etc.) combo will give the widest gear ratio? Essentially I’ll still require a granny mincing range to haul myself up the steeper climbs.

I’m thinking SRAM XX? Are there cheaper options out there but without a huge drop in performance?

Cheers.

Its a bit more than chain rings and cassette
length of cranks
Size of wheels
size of tyres.

Crank - 175mm
Wheels - 27.5
Tyres - God knows. Probably Maxxis High Roller / Ardent

So as you say 27.5 I'm guessing you have 650b wheels, is it an upgrade or a new bike ?
Depends what you call a "mincing" gear I run the "Old Fashioned" 26" wheels and I run a triple 22/32/44 with a road cassette 12-30. Gives me everything to go either slow up hill or fast down.
I tried working all the combinations of doubles on the front and couldn't find on that gave good ratios and close ratios.
So stuck with the 9 speed triple and put 10 speed cassette and shifter on
