I spent this evening rethreading cables having swapped the drop bars for flat on mrs_oab's Giant Liv Invite CX bike.
I've swapped the stem for a spare one, 10mm longer.
The flat bars are actually around 580/600mm, about 60-80mm wider than the drops.
Despite concerns and being told it would be shorter (and this being repeated on so many forums), I've actually slightly lengthened the reach of the bike in feel and the riding position.

Basically.
The extra 10mm stem helps.
The width then pulls you forward more - without them being wide bars.
If only you'd bought her a hybrid to begin with...
