I've been planning this build since crashing my kinesis flat barred bike last May but with a combination of Alpkit delays and then losing my frame and me needing knee surgery I've not been pushing this too hard.  For me and my riding, this configuration is the one I prefer, my gravel bikes don't really go on the road that much and I have a normal gravel bike that does that job and doubles as a winter road bike.

Due to the delays with Alpkit, I switched to a Dolan carbon frame with the upgraded fork on my BTW scheme.   I picked most of the components for a reason.   The toughest issue was getting the rear brakes right as a post-mount calliper and adapter wouldn't fit.  So switched to an SLX flat mount rear and a post-mount front.   This keeps the number of spares I have to carry on our summer trips MTB down but I ended up getting the rear from Europe and then it was wrong handed then I had to get another post mont rear as the levers weren't available.  No biggy as the remaining bits give me a full spare front.

The gearing is currently 36t with 9-50 and it works well I haven't really struggled with the gaps and it's actually not that different from my GRX gearing on my other bike just with an extra big ring but it gives me a faster gear than GRX 40 to 11.  The shifter is XT but the mech Deore a combo recommended on a thread on here.
I picked the Shimano non-series crank as it will let me use my hollowtech powermeter but is a standard 110 BCD rather than the mess that is the series cranks and allows me to swap the chainring size easily and cheaply. ( Seen the price of replacement GRX rings).

The bottom bracket is a wheels manufacturing as I was worried about creaking especially with my weight and the fact it will get hammered a bit

The wheels were custom built by Bespoked in Macc and are 650b Halo Vapour rims with 48mm gravel kings set up tubeless.    

Finally, the bars are my preferred set-up of a flat bar with inboard bar ends, the grips are some ODI foams ones reviewed on Singletrack a while back,  I'm not sure about the colour and I might replace them with black but they were good as I could cut them down a little to move the controls and bar end a little wider which you can't do with lock ons.

I also have a set of 700cc wheels that I'm going to set up for the road with the same gearing but in that set up it will only be used for Cols in the Pyrenees and alps where I spend most of the time in one gear or freewheeling anyhow so I don't think the gaps will matter that extra gear may come in handy at the end of a big climbing day    

I've ridden it twice now and really enjoyed it.   I spent about 95% of the time on the bar ends so I might add some cushioning or tape.  It feels fast but was great on the rougher terrain and the transition from the bar ends to bars felt really natural.  I was worried it would be a bit small but I got used to it really quickly and there's no toe overlapp, unlike my GT grade.     I know it's not everyone's cup of tea but I do think that drop bars on bikes used predominantly off-road is a bit of a fad and for me, the areo gain in using drop bars isn't with the loss in control and breaking that you get with a flat bar.

Not yet, plenty of options though. In winter actually don’t usually drink on rides less than 2-3 hours and if it’s longer I stop for a brew at a cafe or garage. I’ll need two for the summer in France. I can be out for 12 hours on a big day with not many places to top up.

The mismatch/bespoke nature of this setup really appeals to me. Bit like my pinnacle Arkose but more thought out than me using random parts from the shed.

Funny , I agree with you on the point about flat bars offroad, but on a bike like that, if you really spend 95% of your time on the bar ends, I can't help thinking hoods would be a similar position but more comfy and with ease of shifting and braking. Nice bike either way.

Same here, a bike built to suit the riding done not the other way round. Bet it's a total blast
